Vegan "Zimtsterne" - All Ready For Christmas
When I was little, we used to sing this Christmas song at school about "Zimtsterne". I still think about it every time I put these delicious, gluten-free delicacies in the oven and sing along quietly to myself.
I have to admit, as a child I wasn't a big fan of cinnamon stars. I can't even say exactly why. Today, I particularly appreciate the juicy consistency of the cookies, as the other varieties are rather dry. What I particularly like is that the biscuits do not contain refined sugar or gluten-containing flour and, in my opinion, are not only healthier but also more suitable for various dietary requirements due to coeliac disease or diabetes. So definitely something for every gourmet 😊.
Ingredients
For a medium sized biscuit tin
200g ground hazelnuts
150g ground almonds
2 tbsp maple syrup
120g xylitol
A little cinnamon
1 pinch of salt
2 tbsp lemon juice
2 tbsp soy milk (or other vegetable alternative)
Approx. 120g xylitol icing sugar and 2 tbsp water for the glaze
Preparation
- Mix all the ingredients together except the icing sugar and water. Chill the dough for at least 1 hour.
- Roll out the dough to a thickness of approx. 6mm and cut out the biscuits with star moulds.
- Bake the biscuits in a preheated oven at 200°C for 6-8 minutes. 4.
- Leave to cool and in the meantime mix icing sugar with water to make a glaze.
- Decorate the biscuits as desired.
