High Protein Bircher Muesli Swiss Style

If you want to start the day healthy and energised, you can't go wrong with a good old Bircher muesli! The breakfast creation can be traced back to the Swiss doctor Max Bircher-Benner, who prescribed this apple-based dish to his patients as part of a wholefood diet. Fun fact: One thing I remember from my primary school days is the fact that ‘Birchermüesli’ is the only Swiss-German word that has made it around the world.

Even if the original recipe has been modified and added to over the years (like this recipe), the basic ingredients have remained the same and still fill many hungry stomachs as a signature Swiss breakfast dish up to this day.

Ingredients

For 2 servings

500g high protein yoghurt nature

1 tsp honey

4 tbsp oat flakes (heaped)

1 apple (grated)

1 handful of strawberries

1 handful of raspberries

1 handful of blueberries

1 handful of hazelnuts

1 tbsp hemp seeds (heaped)

Preparation

  1. Pour equal amounts of yoghurt into two muesli bowls.
  2. Add half a teaspoon of honey to each and stir well.
  3. Add two heaped tablespoons of rolled oats in each muesli bowl.
  4. Addthe grated apple in equal parts and mix well.
  5. Wash and quarter the strawberries and add to the muesli bowls.
  6. Wash the other berries too and divide evenly between the two bowls.
  7. Spread the hazelnuts and hemp seeds evenly over both bowls and mix carefully.
  8. Optionally, keep a few berries or pieces of apple and use as a topping.

Tipp: If you prefer your Bircher muesli a little ‘mushy’, you can also prepare it the evening before and keep it in the fridge. This softens the oat flakes and the grated apple releases even more juice.
