Fluffy Vanilla Pancakes For The Perfect Brunch
Who isn't a fan of fluffy sweet pancakes for brunch? The dish comes in many different variations.
Personally, I like a light vanilla flavour best. Ideally, it is rounded off by the tart smell of maple syrup or by some sweet chocolate spread and fresh berries. If you don't like it so sweet in the morning, you can also eat the pancakes as a small dessert throughout the day.
Ingredients
For 4 servings
Dry Ingredients
200g of flour
½ sachet of baking powder
Pinch of salt
Some sugar (I use xylitol instead)
1 sachet of vanilla sugar
Wet Ingredients
3dl of vanilla flavoured soy milk
2 vegan "eggs" (I use the egg substitute "VollEy" from "MyEy" and follow the instructions on the package)
Some coconut or rapeseed oil for the pan
Topping
Topping of your choice (I use either maple syrup or vegan chocolate spread with fresh berries)
Instructions
- Put the dry ingredients in a bowl and mix well.
- Add the liquid ingredients and mix it all well again. If the dough is a too thick, just add another sip of milk.
- Heat a little oil in a frying pan and carefully put enough batter into the pan to make small round pancakes. Fry on a low heat until golden brown on both sides and then keep warm until ready to eat.
