Exotic Smoothie Bowl With Banana And Mango

Whether for breakfast, brunch, dessert or a snack in between - this smoothie bowl is my absolute favourite! This perfect combination of sweet fruits and the ice cream-like consistency just always reminds me of holidays at the beach... and who doesn't like that?

It's super easy to make with just three ingredients for the cream, if you have a few frozen bananas ready in the freezer, and has a wonderful natural sweetness. The cream is also great on its own as vitamin-rich ice cream, a wonderful mental journey somewhere in the Caribbean. Enjoy your meal!

Ingredients

For 2 servings

For the cream

1 large frozen banana (in pieces)

½-1 fresh mango (peeled)

Some vegetable milk (I usually use soy milk)

For the topping

two small bowls of cereal (I use "W.K Kellog No Added Sugar Crunchy Muesli")

a little more cereal for above the smoothie cream

½ banana

2 teaspoons of chia seeds

a small handful of pumpkin seeds

a small handful of almonds

Preparation

  1. Place the banana and mango in a high-powered blender.
  2. Add a little plant milk and blend on high speed to a creamy paste until it reaches an ice cream-like consistency. Do not use too much liquid here at the beginning. You can always add more if the cream is too thick.
  3. Fill two small serving bowls about half full with cereal.
  4. Remove the cream from the blender and cover the cereal with it. Smooth everything out nicely.
  5. Decorate the bowls with the remaining ingredients and serve immediately.
